Ingredients  

Mushrooms
  • 8 oz pink oyster mushrooms from KC Mushroom Co., torn into bite-sized clusters
  • 2 tbsp neutral oil avocado or grapeseed
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp garlic powder
  • kosher salt to taste
Lime Crema
  • 1/2 cup sour cream or Mexican crema
  • 1 lime zested and juiced
To Serve
  • 6 small corn tortillas
  • 1/4 cup fresh cilantro chopped
  • 1/2 cup red cabbage thinly sliced
  • 1 avocado sliced
  • 2 tbsp cotija cheese crumbled, optional
  • hot sauce or pickled jalapeños to finish

Instructions
 

  1. Heat oil in a cast iron skillet over medium-high until shimmering.
  2. Add torn mushroom clusters in a single layer — don’t crowd the pan. Let them sit undisturbed for 3-4 minutes until the edges crisp and darken.
  3. Flip and cook another 2-3 minutes. The pink color will fade to a warm tan-brown as they cook through.
  4. Toss with smoked paprika, cumin, garlic powder, and salt in the last minute of cooking.
  5. Whisk lime zest and juice into the sour cream to make the crema.
  6. Warm tortillas directly over a gas flame or in a dry skillet until slightly charred.
  7. Build tacos: mushrooms, cabbage, avocado, crema, cilantro, cotija if using. Finish with hot sauce.
